Savory Three Pepper BBQ Sauce

4 anaheim peppers
3 pablano peppers
6 jalapeno peppers
apple cider vinegar
honey
4 cloves garlic
salt
cracked black pepper
sugar
extra virgin olive oil (EVOO)

Preheat your oven to its highest temperature. Rinse peppers thoroughly and dry. In a large bowl, toss all peppers in extra virgin olive oil and lay out on a large cookie sheet lined with parchment paper. When oven reaches max temp place peppers in oven on cookie sheet for 45 minutes or until all peppers have an even, black char on surface. Remove peppers from oven and let cool for a few minutes. Peel charred skin off all peppers, cut off stems and remove seeds. This process is messy, be sure to harvest as much meat as possibly. If skin cannot be removed from some small, non-charred areas don't worry about it. Set the prepared peppers in a tall glass or plastic jar.
Mince garlic cloves. Get a large sautee pan on the stove on low heat and sautee minced garlic with 1 1/2 tbsp EVOO for about 10 minutes.
Add sauteed garlic and oil to jar containing peppers. Add 1/3 cup apple cider vinegar to pepper mixture. Add 1 tablespoon honey to pepper mixture. Blend pepper, garlic, oil, vinegar, honey mixture with an immersion blender until smooth. Return blended combo to sautee pan and turn up heat to medium/high. Add 1 teaspoon salt and 1/2 teaspoon fresh cracked pepper to mixture and stir constantly. Stir for about 10 minutes until sauce thickens slightly. Add more salt to taste. Serve on smoked ribs, brisket, chicken or pork tenderloin. Also great for dipping fries.
